- 1 whole chicken (about 3–4 lbs), cut into pieces
- 4 cups chicken broth
- 1 cup water
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 1 cup heavy cream
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 cup milk
Instructions
- In a large pot, combine the chicken pieces, chicken broth, water, onion, carrots, celery, garlic, thyme, parsley, salt, and pepper. Bring to a boil over medium-high heat.
- Reduce heat and simmer for about 30-40 minutes, or until the chicken is cooked through. Remove the chicken and let it cool slightly before shredding it into bite-sized pieces.
- While the chicken cools, stir in the heavy cream to the broth and let it simmer on low heat.
- In a mixing bowl, combine the flour, baking powder, and salt. Stir in the melted butter and milk until just combined.
- Drop spoonfuls of the dumpling batter into the simmering broth. Cover and cook for about 15-20 minutes, or until the dumplings are cooked through.
- Add the shredded chicken back into the pot and stir gently to combine. Adjust seasoning as needed.
- Serve hot and enjoy!
