- 4 boneless, skinless chicken breasts
- 8 oz Boursin cheese (any flavor)
- 1 cup fresh spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped (optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup chicken broth
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the Boursin cheese, chopped spinach, sun-dried tomatoes (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Using a sharp knife, cut a pocket into each chicken breast. Be careful not to cut all the way through.
- Stuff each chicken breast with the Boursin cheese mixture, securing with toothpicks if necessary.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
- Pour the chicken broth into the skillet around the chicken breasts. Bring to a simmer.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove the skillet from the oven, let the chicken rest for a few minutes, and then garnish with fresh herbs if desired. Serve warm.
