- 2 medium potatoes, diced

- 4 large flour tortillas

- 1 tsp onion powder
- 1/2 cup sour cream (optional)
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced potatoes and cook until tender, about 10 minutes.
- Season potatoes with salt, pepper, paprika, garlic powder, and onion powder.
- Push potatoes to one side of the skillet and add ground beef.
- Cook beef until browned, breaking it apart with a spoon.
- Mix beef and potatoes together.
- Warm tortillas in a dry skillet or microwave.
- Spoon beef and potato mixture onto tortillas.
- Sprinkle shredded cheese on top.
- Roll tortillas into burritos and serve.
