A creamy and hearty cheesy hamburger potato soup.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 medium potatoes, diced
- 4 cups beef broth
- 1 cup cheddar cheese, shredded
- 1 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp olive oil
Instructions
- In a pot, heat olive oil over medium heat.
- Add ground beef and cook until browned.
- Stir in onion and garlic, cooking until soft.
- Add potatoes and beef broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Stir in milk, cheese, salt, pepper, and paprika.
- Cook until cheese melts and soup thickens.
- Serve hot.
Notes
- Adjust seasoning to taste.
- For a thicker soup, add more cheese.
- Can be topped with green onions or additional cheese.
