A quick and easy one-pan meal combining cheesy beef tortellini with bold enchilada flavors.
Ingredients

- 1 lb ground beef
- 1 (9 oz) package refrigerated cheese tortellini
- 1 (10 oz) can red enchilada sauce
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1 tsp minced garlic
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 cup chopped cilantro
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Add diced onion and minced garlic, sauté for 2 minutes.
- Stir in enchilada sauce, chili powder, cumin, salt, and pepper.
- Add tortellini and 1/2 cup water, stirring to combine.
- Cover and simmer for 8-10 minutes until tortellini is tender.
- Sprinkle cheese on top, cover until melted (2 minutes).
- Garnish with chopped cilantro before serving.
Notes
- Use fresh tortellini for best texture.
- Adjust spice level with more or less chili powder.
- Add black beans or corn for extra veggies.
- Leftovers keep well refrigerated for 3 days.
