Description

Cheesy Chicken Enchiladas are a delicious and comforting dish filled with tender chicken, melted cheese, and flavorful spices, all wrapped in soft tortillas and baked to perfection.


Ingredients

  • 2 cups cooked and shredded chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1 can (10 oz) enchilada sauce
  • 8 small flour tortillas
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add onions and bell peppers, sauté until soft.
  3. Add shredded chicken, cumin, chili powder, garlic powder, salt, and pepper. Stir well.
  4. Spread a thin layer of enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with the chicken mixture and a sprinkle of cheese. Roll and place seam-side down in the dish.
  6. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  7. Bake for 20 minutes or until cheese is melted and bubbly.
  8. Serve warm with optional toppings like sour cream or chopped cilantro.
