Description

Ingredients

  • 1 lb boneless chicken breast, cubed
  • 1 cup white rice, uncooked
  • 2 cups broccoli florets
  • 1 cup cheddar cheese, shredded
  • 1/2 cup milk
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat butter in a large skillet over medium heat.
  2. Add chicken and cook until no longer pink (5-6 minutes).
  3. Stir in rice, broccoli, garlic powder, salt, and pepper.
  4. Add 2 cups water, bring to a boil, then reduce heat to low.
  5. Cover and simmer for 15 minutes until rice is tender.
  6. Stir in milk and cheese until melted and creamy.
  7. Serve hot.

Notes

  • For crispier broccoli, add it during the last 5 minutes of cooking.
  • Substitute any melting cheese for cheddar if preferred.
