Ingredients

- 1 lb boneless chicken breast, cubed
- 1 cup white rice, uncooked
- 2 cups broccoli florets
- 1 cup cheddar cheese, shredded
- 1/2 cup milk
- 1 tbsp butter
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat butter in a large skillet over medium heat.
- Add chicken and cook until no longer pink (5-6 minutes).
- Stir in rice, broccoli, garlic powder, salt, and pepper.
- Add 2 cups water, bring to a boil, then reduce heat to low.
- Cover and simmer for 15 minutes until rice is tender.
- Stir in milk and cheese until melted and creamy.
- Serve hot.
Notes
- For crispier broccoli, add it during the last 5 minutes of cooking.
- Substitute any melting cheese for cheddar if preferred.
- Leftovers keep refrigerated for 3 days.
