Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 can (15 oz) enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook ground beef, onion, and garlic until the beef is browned. Drain excess fat.
  3. Stir in chili powder, cumin, and half of the enchilada sauce. Remove from heat.
  4. Spread a small amount of enchilada sauce in the bottom of a baking dish.
  5. To assemble enchiladas, place a tortilla on a flat surface, spoon 1/4 cup of the beef mixture, and sprinkle with cheese. Roll up the tortilla tightly and place seam-side down in the baking dish.
  6. Repeat with remaining tortillas and beef mixture.
  7. Pour remaining enchilada sauce over the rolled enchiladas and top with remaining cheese.
  8. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  9. Serve hot, topped with sour cream and cilantro.
