- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 can (15 oz) enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, cook ground beef, onion, and garlic until the beef is browned. Drain excess fat.
- Stir in chili powder, cumin, and half of the enchilada sauce. Remove from heat.
- Spread a small amount of enchilada sauce in the bottom of a baking dish.
- To assemble enchiladas, place a tortilla on a flat surface, spoon 1/4 cup of the beef mixture, and sprinkle with cheese. Roll up the tortilla tightly and place seam-side down in the baking dish.
- Repeat with remaining tortillas and beef mixture.
- Pour remaining enchilada sauce over the rolled enchiladas and top with remaining cheese.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
- Serve hot, topped with sour cream and cilantro.
