- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/4 cup sour cream
- 1/4 cup lemon juice
- 1 cup raspberry puree (fresh or frozen)
- Zest of 1 lemon
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing until combined.
- Add the eggs one at a time, mixing well after each addition. Then mix in the sour cream and lemon juice until smooth.
- Pour half of the cheesecake batter over the prepared crust.
- In a small bowl, mix the raspberry puree with the lemon zest. Drop spoonfuls of the raspberry mixture over the cheesecake batter and use a knife to swirl it gently.
- Pour the remaining cheesecake batter over the top, and repeat the raspberry swirls.
- Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight, before serving.
Notes
- For best results, use room temperature cream cheese to avoid lumps.
- You can use store-bought raspberry puree or make your own by blending fresh or frozen raspberries and straining out the seeds.
- This cheesecake can be topped with fresh raspberries or lemon slices before serving for an extra touch.
