Ingredients

- 4 cups riced cauliflower
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/2 cup diced carrots
- 1/2 cup diced bell peppers
- 1/2 cup peas
- 2 eggs, beaten
- 1 cup cooked chicken breast, diced
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1/4 cup chopped green onions
Instructions
- Heat olive oil in a large pan over medium heat.
- Add garlic, carrots, and bell peppers. Cook for 3 minutes.
- Stir in peas and riced cauliflower. Cook for 5 minutes.
- Push the mixture to one side and pour beaten eggs into the pan. Scramble until cooked.
- Add diced chicken, soy sauce, and sesame oil. Stir everything together.
- Cook for another 2 minutes, then garnish with green onions.
Notes
- Use pre-riced cauliflower for quicker prep.
- Replace chicken with tofu for a vegetarian option.
- Adjust soy sauce to taste.
