Ingredients

  • 4 cups riced cauliflower
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 cup diced carrots
  • 1/2 cup diced bell peppers
  • 1/2 cup peas
  • 2 eggs, beaten
  • 1 cup cooked chicken breast, diced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/4 cup chopped green onions

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add garlic, carrots, and bell peppers. Cook for 3 minutes.
  3. Stir in peas and riced cauliflower. Cook for 5 minutes.
  4. Push the mixture to one side and pour beaten eggs into the pan. Scramble until cooked.
  5. Add diced chicken, soy sauce, and sesame oil. Stir everything together.
  6. Cook for another 2 minutes, then garnish with green onions.
