Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 large carrots, chopped
- 1 cup red lentils, rinsed
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the chopped carrots and rinsed lentils to the pot, stirring to combine.
- Pour in the vegetable broth and add the ground cumin and coriander. Bring the mixture to a boil.
- Reduce heat to low, cover, and simmer for about 20 minutes, or until the lentils and carrots are tender.
- Use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
- Season with salt, pepper, and lime juice to taste.
- Serve hot, garnished with fresh cilantro if desired.
