Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 large carrots, chopped
  • 1 cup red lentils, rinsed
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Add the chopped carrots and rinsed lentils to the pot, stirring to combine.
  4. Pour in the vegetable broth and add the ground cumin and coriander. Bring the mixture to a boil.
  5. Reduce heat to low, cover, and simmer for about 20 minutes, or until the lentils and carrots are tender.
  6. Use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
  7. Season with salt, pepper, and lime juice to taste.
  8. Serve hot, garnished with fresh cilantro if desired.
