Ingredients

  • 1 pound carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, grated ginger, and grated turmeric. Cook for an additional 2 minutes until fragrant.
  3. Add the chopped carrots to the pot and pour in the vegetable broth. Bring to a boil, then reduce to a simmer. Cover and cook until the carrots are tender, about 20 minutes.
  4. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth.
  5. Stir in the coconut milk and season with salt and pepper to taste. Reheat gently if necessary.
  6. Serve warm, garnished with fresh cilantro if desired.

Notes

  • For added spice, consider adding a pinch of cayenne pepper.
  • This soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
