- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon fresh turmeric, grated (or 1 teaspoon ground turmeric)
- 1 pound carrots, peeled and chopped
- 4 cups vegetable broth
- 1 can (14 oz) coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, grated ginger, and grated turmeric. Cook for an additional 2 minutes until fragrant.
- Add the chopped carrots to the pot and pour in the vegetable broth. Bring to a boil, then reduce to a simmer. Cover and cook until the carrots are tender, about 20 minutes.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth.
- Stir in the coconut milk and season with salt and pepper to taste. Reheat gently if necessary.
- Serve warm, garnished with fresh cilantro if desired.
Notes
- For added spice, consider adding a pinch of cayenne pepper.
- This soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
