A savory tart featuring caramelized onions and roasted butternut squash on a flaky crust.
Ingredients

- 1 medium butternut squash, peeled and cubed
- 2 large onions, thinly sliced
- 1 sheet puff pastry, thawed
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp fresh thyme leaves
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 400°F (200°C).
- Toss butternut squash with 1 tbsp olive oil, salt, and pepper. Roast for 25 minutes.
- Heat butter and remaining olive oil in a pan. Add onions and cook on low heat until caramelized, about 20 minutes.
- Roll out puff pastry on a baking sheet. Prick with a fork.
- Spread caramelized onions over the pastry, then top with roasted squash.
- Sprinkle thyme and Parmesan cheese on top.
- Bake for 20 minutes or until golden brown.
- Let cool slightly before slicing.
Notes
- Use pre-made puff pastry for convenience.
- Caramelize onions slowly for best flavor.
- Serve warm or at room temperature.
