Description

A savory tart featuring caramelized onions and roasted butternut squash on a flaky crust.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 large onions, thinly sliced
  • 1 sheet puff pastry, thawed
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp fresh thyme leaves
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash with 1 tbsp olive oil, salt, and pepper. Roast for 25 minutes.
  3. Heat butter and remaining olive oil in a pan. Add onions and cook on low heat until caramelized, about 20 minutes.
  4. Roll out puff pastry on a baking sheet. Prick with a fork.
  5. Spread caramelized onions over the pastry, then top with roasted squash.
  6. Sprinkle thyme and Parmesan cheese on top.
  7. Bake for 20 minutes or until golden brown.
  8. Let cool slightly before slicing.
