  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup Gruyere cheese, shredded
  • 2 large eggs
  • 1/2 cup heavy cream
  • Fresh thyme, for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and fit it into a tart pan. Prick the bottom with a fork and set aside.
  3. In a large skillet, heat the olive oil and butter over medium heat. Add the onions, sugar, salt, and pepper, and cook, stirring frequently, until the onions are caramelized, about 20-25 minutes.
  4. Spread the caramelized onions evenly over the puff pastry.
  5. In a bowl, whisk together the eggs and heavy cream. Pour the mixture over the onions.
  6. Sprinkle the shredded Gruyere cheese on top.
  7. Bake in the preheated oven for 25-30 minutes or until the tart is golden brown and set.
  8. Let cool slightly before slicing. Garnish with fresh thyme if desired.
