Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced
  • 1/2 tsp ground cinnamon
  • 1/4 cup caramel sauce
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup cold unsalted butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the pan to form the crust.
  3. Bake crust for 10 minutes, then cool slightly.
  4. Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla.
  5. Pour filling over crust. Top with diced apples.
  6. Mix flour, brown sugar, cinnamon, and cold butter to form crumbs. Sprinkle over apples.
  7. Bake for 35-40 minutes until set. Cool, then drizzle with caramel sauce.
  8. Chill for 2 hours before cutting into bars.

Notes

  • Use Granny Smith apples for a tart contrast.
  • Store leftovers in the fridge for up to 3 days.
  • Let cheesecake cool completely before slicing.
