  • 4 cups water
  • 2 cups granulated sugar
  • 1 teaspoon lemon juice (optional)
  • Canning jars with lids

Instructions

  1. Prepare your canning jars by sterilizing them in boiling water for 10 minutes.
  2. Fill a large pot with water and bring it to a boil. Add the peaches and blanch for 30 seconds to 1 minute until the skins start to loosen.
  3. Remove the peaches from the boiling water and immediately place them in an ice bath to cool. Once cooled, peel the skins off and slice the peaches in half, removing the pits.
  4. In a separate pot, combine water and granulated sugar to create a syrup. Heat over medium heat until the sugar dissolves. You can add lemon juice for flavor and preservation.
  5. Place the peach halves into the sterilized jars, packing them tightly but leaving some space at the top.
  6. Pour the warm syrup over the peaches, ensuring they are fully submerged. Leave about 1/2 inch of headspace at the top of each jar.
  7. Wipe the rims of the jars with a clean cloth to ensure a proper seal and place the lids on securely.
  8. Process the jars in a water bath canner for 20 minutes. Make sure the jars are covered by at least an inch of water during processing.
  9. Once done, remove the jars and let them cool on a clean towel or cooling rack. Check for proper seals after they have cooled.

Notes

  • Use ripe but firm peaches for the best results.
  • You can adjust the sweetness of the syrup by using less sugar if desired.
  • Store the sealed jars in a cool, dark place. Unsealed jars can be refrigerated and used within a few days.
