  • 2 cups corn (frozen or canned)
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 6 large tortillas or wraps
  • 1 cup shredded cheese (optional)
  • Sour cream and salsa for serving (optional)

Instructions

  1. In a large skillet or pot over a campfire or portable stove, cook the ground meat over medium heat until browned.
  2. Add the chopped onion, garlic, and bell peppers. Cook until the vegetables are soft.
  3. Stir in the diced tomatoes, black beans, corn, chili powder, cumin, salt, and pepper.
  4. Bring to a simmer and cook for about 10-15 minutes, stirring occasionally.
  5. Warm the tortillas or wraps over the fire or on a grill.
  6. Spoon the meat mixture onto each tortilla, sprinkle with cheese if desired, and roll up.
  7. Serve with sour cream and salsa, if using.
