- 2 lbs ground beef or turkey
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 bell peppers, chopped
- 2 cans (15 oz each) diced tomatoes
- 2 cans (15 oz each) black beans, drained and rinsed
- 2 cups corn (frozen or canned)
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 6 large tortillas or wraps
- 1 cup shredded cheese (optional)
- Sour cream and salsa for serving (optional)
Instructions
- In a large skillet or pot over a campfire or portable stove, cook the ground meat over medium heat until browned.
- Add the chopped onion, garlic, and bell peppers. Cook until the vegetables are soft.
- Stir in the diced tomatoes, black beans, corn, chili powder, cumin, salt, and pepper.
- Bring to a simmer and cook for about 10-15 minutes, stirring occasionally.
- Warm the tortillas or wraps over the fire or on a grill.
- Spoon the meat mixture onto each tortilla, sprinkle with cheese if desired, and roll up.
- Serve with sour cream and salsa, if using.

- This recipe can easily be doubled or halved depending on your group size.
- Feel free to add other vegetables like zucchini or mushrooms for extra nutrition.
- For a vegetarian option, substitute the meat with extra beans or lentils.
