- 8 ounces fettuccine or linguine pasta
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the shrimp and sprinkle with Cajun seasoning. Cook for 3-4 minutes, until shrimp are pink and cooked through. Remove shrimp from the skillet and set aside.
- In the same skillet, add the chopped onion, red bell pepper, and green bell pepper. Sauté for about 5 minutes until the vegetables are tender.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Return the cooked shrimp to the skillet and stir to combine. Add the cooked pasta and toss to coat in the sauce.
- Serve immediately, garnished with fresh parsley.
