  • 8 ounces fettuccine or linguine pasta
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the shrimp and sprinkle with Cajun seasoning. Cook for 3-4 minutes, until shrimp are pink and cooked through. Remove shrimp from the skillet and set aside.
  3. In the same skillet, add the chopped onion, red bell pepper, and green bell pepper. Sauté for about 5 minutes until the vegetables are tender.
  4. Add the minced garlic and cook for an additional 1 minute until fragrant.
  5. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  6. Return the cooked shrimp to the skillet and stir to combine. Add the cooked pasta and toss to coat in the sauce.
  7. Serve immediately, garnished with fresh parsley.
