  • 12 oz smoked sausage, sliced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1 can diced tomatoes (14.5 oz), undrained
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add sliced sausage and cook until browned, about 5 minutes.
  3. Stir in diced onion, bell peppers, and garlic. Sauté until vegetables are softened, about 3-4 minutes.
  4. Add shrimp and Cajun seasoning to the skillet. Stir well to combine and cook until shrimp are pink and opaque, about 3-5 minutes.
  5. Pour in the diced tomatoes and stir to combine. Cook for an additional 2-3 minutes until heated through.
