- 1 lb shrimp, peeled and deveined
- 12 oz smoked sausage, sliced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 1 can diced tomatoes (14.5 oz), undrained
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add sliced sausage and cook until browned, about 5 minutes.
- Stir in diced onion, bell peppers, and garlic. Sauté until vegetables are softened, about 3-4 minutes.
- Add shrimp and Cajun seasoning to the skillet. Stir well to combine and cook until shrimp are pink and opaque, about 3-5 minutes.
- Pour in the diced tomatoes and stir to combine. Cook for an additional 2-3 minutes until heated through.
- Season with salt and pepper to taste. Remove from heat.
- Garnish with fresh parsley before serving.
