- 2 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 2 tbsp olive oil
- 1 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
Instructions
- Cut chicken breasts into bite-sized pieces.
- Mix Cajun seasoning, garlic powder, onion powder, salt, black pepper, and paprika in a bowl.
- Toss chicken pieces in the seasoning mixture.
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook for 5-6 minutes until browned.
- Add sliced bell peppers and cook for another 4-5 minutes until vegetables soften.
- Serve hot.

- Adjust Cajun seasoning to taste.
- Serve with rice or quinoa.
