- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 medium head of cabbage, chopped
- 4 cups beef broth
- 1 can (14.5 ounces) diced tomatoes with juice
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.
- Add ground beef to the pot and cook until browned, breaking it apart with a spoon.
- Stir in the chopped cabbage, carrots, and celery. Cook for about 5 minutes until the vegetables begin to soften.
- Pour in beef broth and diced tomatoes with their juice. Stir to combine.
- Add thyme, paprika, salt, and pepper. Bring the soup to a boil.
- Reduce heat and let it simmer for about 25-30 minutes, until the cabbage is tender.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley if desired.

- For added flavor, consider adding a splash of Worcestershire sauce.
