Description

A hearty and comforting cabbage soup recipe featuring ground beef, perfect for chilly days.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium head of cabbage, chopped
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes with juice
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.
  2. Add ground beef to the pot and cook until browned, breaking it apart with a spoon.
  3. Stir in the chopped cabbage, carrots, and celery. Cook for about 5 minutes until the vegetables begin to soften.
  4. Pour in beef broth and diced tomatoes with their juice. Stir to combine.
  5. Add thyme, paprika, salt, and pepper. Bring the soup to a boil.
  6. Reduce heat and let it simmer for about 25-30 minutes, until the cabbage is tender.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley if desired.

Notes

  • For added flavor, consider adding a splash of Worcestershire sauce.
  • This soup freezes well, so you can make a large batch and store it for later.
