Ingredients

  • 1 cup brown sugar
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 2 cups whole milk
  • 2 large egg yolks
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream (for whipped topping)
  • 1 tbsp powdered sugar (for whipped topping)
  • 2 tbsp caramel sauce (for drizzle)

Instructions

  1. In a saucepan, whisk brown sugar, cornstarch, and salt.
  2. Gradually whisk in milk until smooth.
  3. Cook over medium heat, stirring constantly, until thickened.
  4. In a separate bowl, lightly beat egg yolks. Slowly add 1/2 cup of the hot mixture to the yolks, whisking constantly.
  5. Pour the yolk mixture back into the saucepan. Cook for 2 more minutes, stirring.
  6. Remove from heat. Stir in butter and vanilla.
  7. Pour pudding into cups and chill for 2 hours.
  8. Whip heavy cream and powdered sugar until stiff peaks form.
  9. Top each pudding cup with whipped cream and drizzle with caramel.
