- 1 medium butternut squash
- 2 cups ricotta cheese
- 1 cup grated mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 2 cups marinara sauce
- 12 lasagna noodles
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the butternut squash in half and remove the seeds.
- Roast the butternut squash in the oven for 25-30 minutes until tender.
- Scoop out the flesh of the roasted squash and mash it in a bowl.
- In a separate bowl, mix the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, basil, parsley, and the mashed butternut squash.
- Season the filling with salt and pepper to taste.
- Cook the lasagna noodles according to package instructions until al dente.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Take a lasagna noodle and spread a generous amount of the butternut squash filling on it.
- Roll the noodle up and place it seam-side down in the baking dish.
- Repeat with the remaining noodles and filling.
- Top the rolls with the remaining marinara sauce and sprinkle the rest of the mozzarella cheese on top.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
