- 1 baguette, sliced into 1/2-inch pieces
- 1/4 cup goat cheese, softened
- 1 tbsp honey
- 1/4 cup chopped walnuts
- Fresh thyme for garnish
Instructions
- Preheat oven to 400°F.
- Toss butternut squash with olive oil, salt, and pepper.
- Roast squash for 25 minutes or until tender.
- Toast baguette slices for 5 minutes until crisp.
- Spread goat cheese on each crostini.
- Top with roasted squash, drizzle with honey.
- Sprinkle walnuts and thyme on top.
- Serve immediately.
