- 1 pound shrimp, peeled and deveined
- 2 medium potatoes, diced
- 3 tablespoons butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced potatoes with 1 tablespoon melted butter, garlic powder, paprika, salt, and pepper.
- Spread potatoes on a baking sheet and roast for 25 minutes or until golden.
- In a bowl, mix shrimp with remaining butter, lemon juice, salt, and pepper.
- Add shrimp to the baking sheet with potatoes and cook for 5-7 minutes until shrimp turn pink.
- Sprinkle with fresh parsley before serving.
