Deliciously tender beef bites tossed in garlic butter, served with creamy herb mash and a side of roasted vegetables.
Ingredients

- 1 pound Beef sirloin steak (Cut into bite-sized pieces)
- to taste Salt and pepper
- 4 tablespoons Butter (Divided)
- 4 cloves Garlic (Minced)
- 2 tablespoons Fresh parsley (Chopped)
- 2 pounds Potatoes (Peeled and diced)
- 1/2 cup Heavy cream
- 2 tablespoons Olive oil
- 4 cups Mixed vegetables (e.g. bell peppers, zucchini, carrots) (Chopped)
- 1 teaspoon Dried herbs (e.g. thyme, rosemary)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large pot, boil the diced potatoes until tender, about 15-20 minutes. Drain and return to the pot.
- Add heavy cream, 2 tablespoons of butter, salt, pepper, and fresh parsley to the potatoes. Mash until creamy and smooth. Set aside.
- In a large skillet, heat 2 tablespoons of butter over medium-high heat. Season the beef bites with salt and pepper.
- Add the beef bites to the skillet, cooking until browned on all sides, about 5-7 minutes.
- Add minced garlic and cook for an additional 1-2 minutes until fragrant.
- In a separate baking sheet, toss the chopped vegetables with olive oil, dried herbs, salt, and pepper. Spread in an even layer.
- Roast the vegetables in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.
- Serve the butter garlic beef bites over a bed of herb mash, with roasted vegetables on the side.
Notes
- Feel free to customize the vegetable mix based on your preferences.
- For a spicier kick, add red pepper flakes to the beef bites.
- This dish pairs well with a side salad for added freshness.
