Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup buffalo sauce
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Place the chicken breast in the crockpot.
  2. Add black beans, kidney beans, diced tomatoes, buffalo sauce, onion, bell pepper, garlic, cumin, chili powder, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Before serving, shred the chicken with two forks and mix it back into the chili.
  6. Serve hot with your choice of toppings.
