- 4 boneless, skinless chicken breasts
- 2 cups diced tomatoes
- 1/4 cup chopped fresh basil
- 2 cloves minced garlic
- 1 tbsp balsamic vinegar
- 1/4 cup shredded mozzarella cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat and cook chicken for 5 minutes per side.
- Transfer chicken to a baking dish.
- Mix tomatoes, basil, garlic, and balsamic vinegar in a bowl.
- Spoon tomato mixture over chicken.
- Sprinkle mozzarella cheese on top.
- Bake for 15 minutes or until chicken is fully cooked.
