- 1 lb chicken, cooked and shredded
- 1 lb pork, cooked and shredded
- 1 cup diced onions
- 1 cup diced celery
- 1 cup diced carrots
- 2 cups corn, frozen or fresh
- 2 cups diced tomatoes (canned or fresh)
- 4 cups chicken broth
- 2 tablespoons Worcestershire sauce
- 2 tablespoons barbecue sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon sugar
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add onions, celery, and carrots, and sauté until the vegetables are tender.
- Stir in the shredded chicken and pork, followed by the corn and diced tomatoes.
- Pour in the chicken broth and add Worcestershire sauce, barbecue sauce, salt, pepper, paprika, and sugar.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 30 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary. Serve hot.
Notes
- You can add other vegetables like green beans or peas for extra flavor.
- Feel free to use leftover meats to save time.
