Ingredients

  • 1 lb pork, cooked and shredded
  • 1 cup diced onions
  • 1 cup diced celery
  • 1 cup diced carrots
  • 2 cups corn, frozen or fresh
  • 2 cups diced tomatoes (canned or fresh)
  • 4 cups chicken broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons barbecue sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon sugar
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, celery, and carrots, and sauté until the vegetables are tender.
  2. Stir in the shredded chicken and pork, followed by the corn and diced tomatoes.
  3. Pour in the chicken broth and add Worcestershire sauce, barbecue sauce, salt, pepper, paprika, and sugar.
  4. Bring the stew to a boil, then reduce the heat and let it simmer for about 30 minutes, stirring occasionally.
  5. Taste and adjust seasoning if necessary. Serve hot.
