Ingredients

  • 1 cup cooked brown rice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 onion, diced
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 1/2 cup snap peas
  • 1/2 cup mushrooms, sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp ginger, grated
  • 1/4 tsp black pepper

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add garlic and onion, cook for 2 minutes.
  3. Add bell pepper, carrot, broccoli, snap peas, and mushrooms. Stir-fry for 5 minutes.
  4. Mix in cooked brown rice.
  5. Add soy sauce, sesame oil, ginger, and black pepper. Stir well.
  6. Cook for another 3 minutes until everything is heated through.
  7. Serve hot.
