A quick and healthy brown rice stir-fry packed with fresh vegetables and protein.
Ingredients

- 1 cup cooked brown rice
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/2 onion, diced
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 1/2 cup snap peas
- 1/2 cup mushrooms, sliced
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp ginger, grated
- 1/4 tsp black pepper
Instructions
- Heat olive oil in a large pan over medium heat.
- Add garlic and onion, cook for 2 minutes.
- Add bell pepper, carrot, broccoli, snap peas, and mushrooms. Stir-fry for 5 minutes.
- Mix in cooked brown rice.
- Add soy sauce, sesame oil, ginger, and black pepper. Stir well.
- Cook for another 3 minutes until everything is heated through.
- Serve hot.
Notes
- Use day-old rice for best texture.
- Add protein like tofu, chicken, or shrimp if desired.
- Adjust vegetables based on preference.
