  • 1/4 cup flour
  • 1/4 cup butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions and garlic, and sauté until onions are translucent.
  2. Sprinkle the flour over the onion mixture and stir for 2 minutes.
  3. Slowly add the vegetable broth while whisking to avoid lumps.
  4. Add the broccoli florets and bring to a boil. Reduce heat and simmer until broccoli is tender, about 10 minutes.
  5. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  6. Stir in the heavy cream and shredded cheddar cheese until melted and combined.
  7. Season with salt and pepper to taste. Serve warm.
