- 4 cups broccoli florets
- 1 cup chopped onions
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 1/4 cup flour
- 1/4 cup butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the onions and garlic, and sauté until onions are translucent.
- Sprinkle the flour over the onion mixture and stir for 2 minutes.
- Slowly add the vegetable broth while whisking to avoid lumps.
- Add the broccoli florets and bring to a boil. Reduce heat and simmer until broccoli is tender, about 10 minutes.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Stir in the heavy cream and shredded cheddar cheese until melted and combined.
- Season with salt and pepper to taste. Serve warm.
