- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup buttermilk
- 1 large egg
- 2 tbsp melted butter
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/4 cup chopped pecans
- 1/4 cup dried cranberries
- Maple syrup for serving
Instructions
- Preheat a non-stick skillet over medium heat.
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk buttermilk, egg, melted butter, and vanilla.
- Combine wet and dry ingredients. Stir in pecans and cranberries.
- Pour 1/4 cup batter per pancake onto the skillet.
- Cook until bubbles form, then flip and cook until golden.
- Serve warm with maple syrup.
Notes
- For extra flavor, add orange zest to the batter.
- Substitute buttermilk with milk mixed with 1 tsp vinegar.
- Keep pancakes warm in a low oven until ready to serve.
