Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the diced potatoes, bell peppers, and onions.
  3. In another bowl, whisk together the eggs, almond milk, garlic powder, salt, and pepper.
  4. If using, add the cooked sausage to the vegetable mixture.
  5. Pour the egg mixture over the vegetables and sausage, mixing well.
  6. Transfer the mixture to a greased baking dish.
