- 1 cup diced potatoes
- 1 cup diced bell peppers
- 1 cup diced onions
- 6 large eggs
- 1 cup almond milk
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked sausage (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the diced potatoes, bell peppers, and onions.
- In another bowl, whisk together the eggs, almond milk, garlic powder, salt, and pepper.
- If using, add the cooked sausage to the vegetable mixture.
- Pour the egg mixture over the vegetables and sausage, mixing well.
- Transfer the mixture to a greased baking dish.
- Bake for 30-35 minutes or until the casserole is set and golden.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- This casserole can be made ahead of time and baked in the morning.
