Ingredients

- 6 eggs
- 1 cup milk
- 1 cup diced ham
- 1 cup shredded cheese
- 2 cups diced potatoes
- 1/2 cup chopped onion
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Grease the crockpot with cooking spray.
- In a bowl, whisk together eggs and milk.
- Add ham, cheese, potatoes, onion, salt, and pepper to the egg mixture.
- Pour the mixture into the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Check for doneness and serve warm.
Notes
- Feel free to add vegetables like bell peppers or spinach.
- Store leftovers in the refrigerator for up to 3 days.
- This can be prepared the night before and cooked in the morning.
