Delicious breakfast burritos filled with eggs, cheese, and vegetables.
Ingredients

- 4 large eggs
- 1 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/4 cup cooked sausage or bacon (optional)
- 4 large flour tortillas
- Salt and pepper to taste
Instructions
- In a bowl, whisk eggs with salt and pepper.
- In a skillet, sauté bell peppers and onions until soft.
- Add cooked sausage or bacon, if using.
- Pour in the eggs and scramble until cooked.
- Warm tortillas in another skillet.
- Place egg mixture in the center of each tortilla.
- Sprinkle cheese on top and roll up the tortillas.
- Serve warm.

- Can be made ahead and frozen.
