  • 4 large flour tortillas

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. In a skillet over medium heat, sauté the onions and bell peppers until soft, about 3-4 minutes.
  3. Add the crumbled sausage or bacon (if using) to the skillet and cook until heated through.
  4. Pour the egg mixture into the skillet. Cook, stirring gently, until the eggs are just set, about 5 minutes. Remove from heat and stir in the cheese.
  5. Warm the tortillas in a separate skillet or microwave until pliable.
  6. Divide the egg mixture evenly among the tortillas. Roll each tortilla tightly to form a burrito.
