- 4 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked and crumbled breakfast sausage or bacon (optional)
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- Salt and pepper to taste
- 4 large flour tortillas
- Salsa or hot sauce for serving (optional)
Instructions
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- In a skillet over medium heat, sauté the onions and bell peppers until soft, about 3-4 minutes.
- Add the crumbled sausage or bacon (if using) to the skillet and cook until heated through.
- Pour the egg mixture into the skillet. Cook, stirring gently, until the eggs are just set, about 5 minutes. Remove from heat and stir in the cheese.
- Warm the tortillas in a separate skillet or microwave until pliable.
- Divide the egg mixture evenly among the tortillas. Roll each tortilla tightly to form a burrito.
- Serve with salsa or hot sauce if desired.
