- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh blueberries
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup cold butter, cubed
Instructions
- Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper.
- Mix graham cracker crumbs, sugar, and melted butter. Press into the pan to form the crust.
- Bake crust for 10 minutes, then let it cool slightly.
- Beat cream cheese and sugar until smooth. Add eggs and vanilla, mixing well.
- Pour cheesecake mixture over the crust. Scatter blueberries on top.
- Combine flour and brown sugar. Cut in butter until crumbly and sprinkle over blueberries.
- Bake for 35-40 minutes until the center is set. Cool completely before cutting into bars.
Notes
- Use room-temperature cream cheese for smoother mixing.
- Frozen blueberries work if fresh are unavailable.
- Store leftovers in the refrigerator for up to 5 days.
