- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon fajita seasoning
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 8 small flour tortillas
- Fresh lime, for serving
- Chopped cilantro, for garnish
Instructions
- Preheat the Blackstone griddle over medium-high heat.
- In a bowl, toss the chicken breasts with olive oil and fajita seasoning until well coated.
- Place the chicken on the griddle and cook for about 5-7 minutes per side, or until cooked through.
- Remove the chicken from the griddle and let it rest for a few minutes before slicing.
- Add the sliced bell peppers and onion to the griddle. Sauté until they are tender and slightly charred, about 5-6 minutes.
- Warm the tortillas on the griddle for about 30 seconds on each side.
- Slice the chicken and serve on the tortillas topped with sautéed vegetables, fresh lime juice, and cilantro.
