- 1/2 cup unsalted butter
- 3/4 cup milk
- 1 pound breakfast sausage
- 2 cups milk
- 1 teaspoon black pepper

Instructions
- Preheat the oven to 450°F (230°C).
- In a large bowl, whisk together the flour, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture and work it in with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
- Pour in the milk and stir until just combined.
- Turn the dough out onto a floured surface and knead gently for a few seconds until it comes together.
- Roll out the dough to about 1 inch thick and cut out biscuits using a biscuit cutter.
- Place the biscuits on a baking sheet and bake for 10-12 minutes or until golden brown.
- In a skillet over medium heat, cook the breakfast sausage until browned and crumbled.
- Sprinkle the flour over the sausage and stir to combine, cooking for an additional minute.
- Slowly add the milk while stirring, and bring the mixture to a simmer.
- Continue to cook until the gravy thickens, then season with black pepper and salt to taste.
- Serve the biscuits warm, topped with the sausage gravy.
Notes
- For fluffier biscuits, avoid over-kneading the dough.
- Feel free to add additional seasonings to the gravy, such as garlic powder or cayenne pepper for a kick.
