Instructions

  1. Preheat the oven to 450°F (230°C).
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Add the cold, cubed butter to the flour mixture and work it in with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
  4. Pour in the milk and stir until just combined.
  5. Turn the dough out onto a floured surface and knead gently for a few seconds until it comes together.
  6. Roll out the dough to about 1 inch thick and cut out biscuits using a biscuit cutter.
  7. Place the biscuits on a baking sheet and bake for 10-12 minutes or until golden brown.
  8. In a skillet over medium heat, cook the breakfast sausage until browned and crumbled.
  9. Sprinkle the flour over the sausage and stir to combine, cooking for an additional minute.
  10. Slowly add the milk while stirring, and bring the mixture to a simmer.
  11. Continue to cook until the gravy thickens, then season with black pepper and salt to taste.
  12. Serve the biscuits warm, topped with the sausage gravy.
