Ingredients

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup mascarpone cheese
  • 1/2 cup Biscoff spread
  • 1 teaspoon vanilla extract
  • Biscoff cookies for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix Biscoff cookie crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan to form the crust.
  3. Bake the crust for 10 minutes, then remove from the oven and allow to cool.
  4. In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form.
  5. In another bowl, combine mascarpone cheese, Biscoff spread, and vanilla extract. Mix until smooth.
  6. Gently fold the whipped cream into the mascarpone mixture until well combined.
  7. Spread the cream mixture over the cooled crust evenly.
  8. Chill in the refrigerator for at least 4 hours or until set.
  9. Before serving, top with crushed Biscoff cookies and drizzle with extra Biscoff spread.
