- 1/2 cup Biscoff spread

- Biscoff cookies for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix Biscoff cookie crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan to form the crust.
- Bake the crust for 10 minutes, then remove from the oven and allow to cool.
- In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form.
- In another bowl, combine mascarpone cheese, Biscoff spread, and vanilla extract. Mix until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Spread the cream mixture over the cooled crust evenly.
- Chill in the refrigerator for at least 4 hours or until set.
- Before serving, top with crushed Biscoff cookies and drizzle with extra Biscoff spread.
