Ingredients

- 1 onion, chopped
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup pasta or rice
- 2 cups spinach or kale
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Add broth, tomatoes, thyme, basil, salt, and pepper. Bring to a boil.
- Add pasta or rice. Cook until tender.
- Stir in spinach or kale until wilted.
- Serve hot.
