Ingredients

- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 1 cup green beans, chopped
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can diced tomatoes
- 1 cup corn kernels
- 1 cup cooked beans of choice
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add carrots, potatoes, and green beans. Cook for 5 minutes.
- Pour in vegetable broth and add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add diced tomatoes, corn, and beans. Simmer for another 10 minutes.
- Serve hot and enjoy.
