- 1 lb beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, diced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 potatoes, peeled and diced
- 1 cup green beans, chopped
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Brown the beef cubes on all sides, then remove and set aside.
- In the same pot, sauté onions, carrots, and celery until softened, about 5 minutes. Add garlic and cook for 1 more minute.
- Return the beef to the pot. Pour in beef broth and diced tomatoes. Stir in potatoes, green beans, thyme, and rosemary.
- Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour or until beef is tender.
- Season with salt and pepper. Serve hot.

- For extra flavor, use homemade beef broth.
- Add other vegetables like peas or corn if desired.
- Store leftovers in an airtight container for up to 3 days.
