Description
A hearty beef vegetable soup packed with flavor and nutrients.
Ingredients

- 1 lb beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides, about 5 minutes. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery for 5 minutes.
- Add garlic and cook for 1 minute.
- Return beef to pot and add broth, tomatoes, thyme, rosemary, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Season with salt and pepper.
- Remove bay leaf before serving.
Notes
- For thicker soup, add 1 tbsp tomato paste.
- Substitute fresh herbs if available.
- Freezes well for up to 3 months.
