Description

A hearty and nutritious beef vegetable soup packed with flavors and essential nutrients.


Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup green beans, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides. Remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened.
  4. Add garlic and cook for 1 minute.
  5. Return beef to the pot. Pour in beef broth and diced tomatoes.
  6. Stir in green beans, thyme, and rosemary.
  7. Bring to a boil, then reduce heat and simmer for 45 minutes.
  8. Season with salt and pepper. Serve hot.
