Ingredients

- 1 lb beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup green beans, chopped
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery until softened.
- Add garlic and cook for 1 minute.
- Return beef to the pot. Pour in beef broth and diced tomatoes.
- Stir in green beans, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Season with salt and pepper. Serve hot.

- Use fresh vegetables for the best flavor.
- You can substitute beef broth with vegetable broth for a lighter version.
- Store leftovers in an airtight container for up to 3 days.
