- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheese (cheddar or Mexican blend)
- 12 small corn tortillas
- Oil for frying
- Sour cream and salsa for serving
Instructions
- In a skillet over medium heat, cook the ground beef with the diced onion and minced garlic until the beef is browned and cooked through.
- Drain excess fat, then stir in chili powder, cumin, salt, and pepper. Mix well and remove from heat.
- Add shredded cheese to the beef mixture and stir until melted.
- Heat the corn tortillas in a dry skillet for about 30 seconds on each side to make them pliable.
- Place 2-3 tablespoons of the beef filling on one end of each tortilla and roll tightly.
- Secure with a toothpick if needed.
- In a deep skillet or pot, heat oil over medium-high heat. Fry the taquitos in batches until golden and crispy, about 3-4 minutes on each side.
- Remove from oil and drain on paper towels.
- Serve hot with sour cream and salsa.
Notes
- For extra flavor, add chopped cilantro to the beef mixture.
- You can bake the taquitos at 400°F (200°C) for 15-20 minutes for a healthier option.
