Description

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 12 small corn tortillas
  • Oil for frying
  • Sour cream and salsa for serving

Instructions

  1. In a skillet over medium heat, cook the ground beef with the diced onion and minced garlic until the beef is browned and cooked through.
  2. Drain excess fat, then stir in chili powder, cumin, salt, and pepper. Mix well and remove from heat.
  3. Add shredded cheese to the beef mixture and stir until melted.
  4. Heat the corn tortillas in a dry skillet for about 30 seconds on each side to make them pliable.
  5. Place 2-3 tablespoons of the beef filling on one end of each tortilla and roll tightly.
  6. Secure with a toothpick if needed.
  7. In a deep skillet or pot, heat oil over medium-high heat. Fry the taquitos in batches until golden and crispy, about 3-4 minutes on each side.
  8. Remove from oil and drain on paper towels.
  9. Serve hot with sour cream and salsa.

Notes

  • For extra flavor, add chopped cilantro to the beef mixture.
