- 1 tablespoon taco seasoning
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 avocado
- 1/2 cup sour cream
- 1 lime, juiced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add taco seasoning to the beef and stir well to combine. Cook according to package instructions.
- In a separate bowl, mash the avocado and mix with sour cream and lime juice to create the avocado crema. Season with salt and pepper to taste.
- To assemble the taco bowls, divide the cooked rice among four bowls.
- Top each bowl with seasoned beef, black beans, corn, diced tomatoes, and a generous dollop of avocado crema.
- Garnish with fresh cilantro before serving.
