Ingredients

  • 1 packet Taco seasoning
  • 2 cups Rice (cooked)
  • 1 can Black beans (drained and rinsed)
  • 1 cup Corn (frozen or canned)
  • 1 cup Cherry tomatoes (halved)
  • 1 Avocado (for crema)
  • 1/2 cup Sour cream
  • 2 tablespoons Lime juice
  • to taste Salt
  • for garnish Fresh cilantro

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned.
  2. Add taco seasoning and cook according to package instructions.
  3. In a bowl, combine cooked rice, black beans, and corn.
  4. In a blender, add avocado, sour cream, lime juice, and salt. Blend until smooth to create the avocado crema.
  5. To assemble, place a scoop of the rice mixture in a bowl, top with seasoned beef, cherry tomatoes, and a drizzle of avocado crema.
  6. Garnish with fresh cilantro and serve.
