- 1 pound Ground beef
- 1 packet Taco seasoning
- 2 cups Rice (cooked)
- 1 can Black beans (drained and rinsed)
- 1 cup Corn (frozen or canned)
- 1 cup Cherry tomatoes (halved)
- 1 Avocado (for crema)
- 1/2 cup Sour cream
- 2 tablespoons Lime juice
- to taste Salt
- for garnish Fresh cilantro
Instructions
- In a skillet over medium heat, cook the ground beef until browned.
- Add taco seasoning and cook according to package instructions.
- In a bowl, combine cooked rice, black beans, and corn.
- In a blender, add avocado, sour cream, lime juice, and salt. Blend until smooth to create the avocado crema.
- To assemble, place a scoop of the rice mixture in a bowl, top with seasoned beef, cherry tomatoes, and a drizzle of avocado crema.
- Garnish with fresh cilantro and serve.
