- 1 pound beef sirloin, thinly sliced
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 cup sour cream
- Salt and pepper to taste
- 8 ounces egg noodles, cooked according to package instructions
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add the beef slices and cook until browned. Remove from skillet and set aside.
- In the same skillet, add the onion and garlic, cooking until soft.
- Add the mushrooms and cook until they’re browned and tender.
- Stir in the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer.
- Return the beef to the skillet and stir in the sour cream. Cook until heated through. Season with salt and pepper.
- Serve the beef stroganoff over the cooked egg noodles and garnish with fresh parsley.
Notes
- For a gluten-free version, use gluten-free egg noodles or serve over rice.
