- 1 pound beef sirloin, thinly sliced
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 cup sour cream
- Salt and pepper to taste
- 8 ounces egg noodles
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the egg noodles according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the diced onion and cook until translucent, about 3 minutes. Add the minced garlic and sliced mushrooms, and cook until the mushrooms are tender, about 5 minutes.
- Return the beef to the skillet. Stir in the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer and let cook for about 5 minutes.
- Reduce the heat to low and stir in the sour cream. Mix until well combined and heated through. Season with salt and pepper to taste.
- Serve the beef stroganoff over the cooked egg noodles and garnish with fresh parsley.
